At work we have a monthly meeting with breakfast type foods. This next month is my turn and I'm tired of the same old bagels and fruit. I want to make a great casserole. So I'm putting it out there for each of you to send me your best recipes for a great breakfast casserole.

My Mother-in-Law makes the BEST breakfast casserole. Let me look for the recipe.

Anyway, it involves potatoes, ground sausage, onions, bell pepper, green chilis, egg and cheese. Yummmmm. I so want some now! THanks!
It is really easy too!
You can make it the night before and cook it in the morning.
It may be too late, but thought I'd share my recipe with you. :)
My Grandma made a really yummy casserole for every holiday we had. It may not be the most creative, but seriously good and very easy. :)
hashbrowns or crossiant dough (just the Pillsbury roll out kind- but I like the hashbrowns myself!)
ground sausage
cheese
eggs
milk
Brown hasbrowns and lay in the botton of the dish. brown sausage and put onto of hash. sprinkle cheese on top of that. whip up a few eggs with the milk and pour on top. bake at 400 for approx 20 minutes or until eggs are cooked through!
you can use as much meat and cheese as you like and it's good reheated.
